Vegetable Stew

500g Mixed vegetables of your choice, chopped

2 onion, chopped

500ml or( 2 cup ) coconut milk fresh

5 to 10 curry leaves

2 table spoon of oil your choice

1 inch piece fresh ginger,Peeled and chopped

2 teaspoon ground black pepper

   salt for taste

 

 

cook the vegetables in a large pan of lightly salted boiling water for about 10 minutesStir in the coconut milk and add the curry leaves and simmer for 1 minuteHeat the oil in a small pan over medium heat, add the ginger and stir-fry for about 1 minutes.Pour into the vegetables, mix well, then add the black pepper and serve.
