Vegetable Rolls 

DESCRIPTION

​Thinking of a funky snacks to fill your kids' lunchboxes? Try this easy to prepare vegetable rolls.. 

Ingredients

  • 4 potatoes
  • ½ turmeric powder
  • dry fenugreek leaves  handful
  • ½ tsp chilli powder
  • ½ tsp cumin seeds
  • Little bit Pepper corn
  • 2 cloves
  • Cardamom pods
  • Coriander leaves
  • Plain flour
  • Bread crumbs 
  • Spring roll Pastry
  • Salt to taste
  • Oil for deep frying
  • Lemon squeeze

Method

  1. Peel and roughly chop all potatoes
  2. Boil the potatoes in the microwave oven by sprinkling a little bit of water on the potatoes and leaving in the oven for 10 minutes
  3. Take a mortar and pestle. Peel cardamom pods and add into the mortar and pestle.
  4. Add peppercorns, cloves and cumin seeds into the pestle. Grind all the ingredients well together. Leave aside.
  5. Take plain flour and add water. Make sure mixture is not too thick nor too thin. Leave aside.
  6. Take out the boiled potatoes and add turmeric powder, chilli powder, dried fenugreek leaves and the mixture that were ground using mortar and pestle
  7. Mix and smash the ingredients together with the potatoes.
  8. Add the salt to taste in the mash
  9. Add a squeeze of lemon and 1 spoon oil
  10. Add coriander leaves and mix.
  11. Take a spring roll pastry and spread it open
  12. Place a handful of the potato mash diagonally on one corner of the square pastry and roll and fold the pastry as shown in the video.  Dip these into the plain flour mixture and then dip the rolls into the bread crumbs so that the roll is cover by bread crumbs.
  13. Place oil on wok and wait till it heats
  14. Gently drop vegetable rolls into the oil and wait till they turn golden brown and then remove.
  15. Serve warm with sauce of your liking.
