Vegetable Kurma
DESCRIPTION
Vegetable kurma ( also known as korma) is a delicious creamy curry made with spices, coconut milk and vegetables. This video shows how such as authentic recipe can be made in minutes using the microwave over garnished with coriander leaves, this exotic curry makes a tasty meal when had with naan,rice, chapati ot bread. Watch the video have this aromatic curry in less than 15 minutes.
Ingredients
- 1 cup of vegetables
- beans,pead,potatoes and carrots (chopped & boiled)hopped- small piece
- (you can add any other vegetables)
- Tomato puree - 1 cup
- coconut milk - 1 large bowl
- ginger chopped-small piece
- 2 cloves garlic-chopped
- 1 large onion-chopped
- coriander leaves - chopped finely for garnishing
- Chilli powder - 1 tsptsp
- Turmeric powder -1 tsp
- Coriander powder 1 tsp
- Salt to taste
- Oil - about 2 tbsp
- 1 tsp cumin seeds
- Cloves a few
- Cinammon bark-a few
- 1/2 tsp fennel seeds powder
- Channa dhal - 1 tbsp.

Method
- In a microwave safe container / bowl add oil
- Out of the cumin seeds add a pinch into the bowl, 2 cloves and about 2 small barks of cinamon.
- Add the onion, garlic and ginger into the bowl & mix well.
- Keep in the microwave oven for 3 minutes
- Mix well and add the tomato puree into the bowl,chilli powder and coriander powder.
- Mix well and place in the microwave oven for 3 minutes
- Mix well and add the boiled vegetables leave aside.
- Take the coconut milk in a bowl and add the turmeric powder and salt mix well.
- Transfer the remaining spices into the motar& pestle and grind until it becomes a powder. Add this powder into the coconut milk and mix well.
- Add the coconut milk mixture in the microwave safe container that has all the vegetables mix well and keep in the microwave oven for 4 minutes
- Garnish with coriander leaves .
- Serve with naan,rice,chappati or bread.
