Vegetable Kothu Roti

DESCRIPTION

​Experience the taste of Srilanka at your very own place with this popular Srilankan Cusine. Easy to prepare, delicious to have!. 

Ingredients

  • 2 rotis or chapattis preferably left over ones from previous day
  • 2 cups of mixed vegetable
  • A piece of ginger cut into small pcs
  • Pinch of peppercorn
  • 3 to 4 cloves garlic
  • 1 to 2 cardamom pods
  • 2 to 3 cloves
  • 1 chilli chopped finely (can add more chillies to your taste)
  • Handful of mint leaves
  • 2 medium sized onions chopped into small pieces
  • ½ tsp Chilli powder
  • ½ tsp turmeric powder
  • 2 to 3 tomatoes chopped
  • Coriander leaves chopped for garnishing
  • ½ tsp fennel seeds
  • ½ tsp cumin seeds
  • ½ cup bread crumbs
  • Salt o taste
  • A squeeze of lemon juice to taste
  • Oil for frying

Method

  1. Chop the chappatis into small pieces
  2. Place pan on stove , add oil and heat
  3. Once oil heats add ginger, cardamom, cloves, peppercorns, chillies and garlic.
  4. Add ½ tsp fennel seeds and ½ tsp cumin seeds
  5. Add onions
  6. Add tomatoes, turmeric and mint leaves and fry well. Wait until you get a nice aroma.
  7. Add mixed vegetables continue to fry
  8. Add chilli powder and salt. Continue to fry well.
  9. Add lemon juice to taste
  10. Add roti pieces and bread crumbs and mix all ingredients well together.
  11. Serve hot.
