Vegetable Kothu Roti
DESCRIPTION

Ingredients
- 2 rotis or chapattis preferably left over ones from previous day
- 2 cups of mixed vegetable
- A piece of ginger cut into small pcs
- Pinch of peppercorn
- 3 to 4 cloves garlic
- 1 to 2 cardamom pods
- 2 to 3 cloves
- 1 chilli chopped finely (can add more chillies to your taste)
- Handful of mint leaves
- 2 medium sized onions chopped into small pieces
- ½ tsp Chilli powder
- ½ tsp turmeric powder
- 2 to 3 tomatoes chopped
- Coriander leaves chopped for garnishing
- ½ tsp fennel seeds
- ½ tsp cumin seeds
- ½ cup bread crumbs
- Salt o taste
- A squeeze of lemon juice to taste
- Oil for frying
Method
- Chop the chappatis into small pieces
- Place pan on stove , add oil and heat
- Once oil heats add ginger, cardamom, cloves, peppercorns, chillies and garlic.
- Add ½ tsp fennel seeds and ½ tsp cumin seeds
- Add onions
- Add tomatoes, turmeric and mint leaves and fry well. Wait until you get a nice aroma.
- Add mixed vegetables continue to fry
- Add chilli powder and salt. Continue to fry well.
- Add lemon juice to taste
- Add roti pieces and bread crumbs and mix all ingredients well together.
- Serve hot.
