VEGETABLE DHAL
1 ½ teaspoons olive oil
1 Onion, finely Chopped
2 cloves garlic, chopped
1 teaspoon ground coriander
1 teaspoon fennel seeds
1 teaspoon ground cukin
1 teaspoon turmeric powder
1 cup red lentils
2 tomatoes chopped
150 g chopped pumpkin
2 cups water
Heat the oil in a pan over medium heat
Add onion, garlic and spices and cook for 5 minutes
Add the lentils, tomatoes, pumpkin and water
Bring to the boil, Then reduce the heat and simmer for 45 minutes or until the lentils are soft.
Serve with steamed rice.
