Potato Cabbage Kofta

 

 

Ingredients

  • 1 bowl Cabbage
  • 4 small potatoes – boiled and mashed
  • ½ tsp fennel seeds
  • 1 tsp chilli powder
  • 1 tsp Garam masala powder
  • Plain Flour – enough to make the Kofta balls
  • Salt to taste
  • Water
  • Oil for deep fry
  • Gravy
  • Large piece of butter
  • ½ cup coconut cream
  • ½ cup yoghurt
  • 2 onions chopped into small pieces
  • 4 cloves of garlic finely chopped
  • 2 tsp coriander powder
  • ½ tsp turmeric powder
  • Salt to taste
  • A bowl of tomato puree
  • 2 tsp garam masala powder
  • 1 tsp chilli powder
  • 4 to 5 cloves
  • ½ tsp fennel seeds
  • 2 cardamom pods
  • Small handful of dried fenugreek leaves
  • Small amount of oil

Method

  1. Transfer cabbage into a separate bowl
  2. Add mashed potatoes to this bowl
  3. Add chilli powder, garam masala powder, fennel seeds, salt to taste and add enough plain flour to be able to make kofta balls. Sprinkle a little bit of water to so that the flour and vegetable mixture stick together making it easier to make the balls.
  4. Make small to medium  kofta balls with the mixture
  5. Turn on stove, place wok on stove and add enough oil in the wok for deep frying
  6. Once oil heats, gently add kofta into the oil, wait till they turn golden brown and remove


For Gravy:

  1. Turn on the stove and place utensil on top
  2. Add butter to the dish and once it begins to melt, add the onions, garlic, coriander powder, cloves, cardamom, fenugreek leaves and fennel seeds and fry ingredients together. Add oil if necessary for frying (this is only if you find the butter to be insufficient)
  3. Once the ingredients are fried well add turmeric powder, salt to taste and tomato puree into the dish. Mix the ingredients together and fry for sometime.
  4. Add garam masala and chilli powder and continue to mix
  5. Add coconut cream and mix throughout
  6. Add yoghurt to this gravy and mix
  7. Once it comes to a boil, remove from stove
  8. Add kofta balls into the gravy and serve

The deep fried potato and cabbage balls are gently dropped in to a creamy spicy curry.  Enjoy this with bread or rice.
