Idli Chilli Powder

DESCRIPTION

​Idli Chilli Powder is a very common side dish that is eaten with idli's and dosas. It is usually mixed with a few generous drops of oil or melted ghee. Bits of idli or dosa are dipped into this, before it is enters your taste buds. It is very popular especially in South India. 

Ingredients

  • 30 – 40 Red dried chillies
  • 1 tbsp coriander seeds
  • 2 tsp fenugreek seeds
  • 1 cup whole urid dhal
  • Salt for taste
  • Asafoetida
  • Oil for frying

Method

  1. Turn on the stove and add some oil in the saucepan.
  2. Add the red dried chillies and fry well.
  3. Remove the red chillies once it has fried well, and keep aside.
  4. Now add the whole white urid dhal into the saucepan. This needs to be fried until the urid dhal turns golden brown, and releases a beautiful aroma. Please note that you do not need to add oil in this step because the remaining oil after frying the red dried chillies will be sufficient.
  5. Remove the urid dhal from the stove and keep aside (with the fried red dried chillies)
  6. Now add the fenugreek seeds, and coriander seeds into the pan, and fry until they turn golden brown, give a beautiful fragrance, and the coriander seeds start popping. Then take it off the pan, and add along with other fried ingredients.
  7. To these ingredients, add salt to taste
  8. Add a pinch of asafoetida for flavour
  9. Transfer ingredients into the blender, and blend until it turns into a powder.
  10. It is now ready to be served. Mix the chilli powder a little oil or ghee while serving. Store in a clean dry container for longer life.
