Nuts and Sultana Cake
DESCRIPTION
A tasty and filling cake made with the goodness of healthy nuts such as cashew and almonds along with natural sweetness of sultana. A delicious way to treat yourself in between meals. Check out the video to find out just how easy it is to make.
Ingredients
- Handful of Cahewnuts
- Generous handful of almonds
- Handful of sultanas
- 185g of butter
- 1 cup caste rsugar
- 2 cups self raising flour
- 3 eggs
- ¼ cup milk
- Coffee powder for aroma
- Nutmeg powder for aroma
- Cardamom seeds few for aroma
Method
- Soften the butter in the microwave for 15-30 secs. Don’t melt it.
- 2) Add sugar to the softened butter and beat them together until creamy
- 3) Add eggs into the beaten mixture and beat the ingredients together
- 4) Sift the self raising flour into the mixture
- 5) Add milk after adding half the amount of self raising flour and then add the rest of the self raising flour
- 6) Make sure that the mixture is not too thick or too soft (refer to the video)
- 7) Add coffee powder, nutmeg powder
- 8) Grind cardamom seeds and add to the mixture
- 9) Take half the amount of almonds and grind roughly into a powder
- 10) Add into mixture
- 11) Repeat step 9 and 10 for cashewnuts instead
- 12) Add sultanas into mixture
- 13) If the mixture gets thick, add some more milk at this stage
- 14) Preheat oven to 180 degrees
- 15) Spread butter into cake tin and pour mixture into cake tin
- 16) Make sure only half the tin is filled (use 22 cm cake tin) as the cake will rise
- 17) Decorate the mixture in the cake tin with the remaining nuts
- 18) Leave in the oven for 45 mins to 1 hour
- 19) Check at 45 minutes using a fork and poking it through at the centre of the cake. If the fork does not stick to the mixtures, the cake is ready
- 20) Take and serve after it cools
