Mushroom Curry

An exotic way of enjoying the chewy taste of Mushrooms. This recipe combines aromatic spices with tasty mushrooms to bring you a splendid meal in minutes. Mix serve this beautiful thick creamy curry boiled rice to make an extravagant meal. Serve it someone else and blow their mind away. Ingredients:
Mushroom bowl (full large button mushrooms)
Ingredients for gravy (SET 1)
1 Tomato
1 small sized Spanish onion
Small piece ginger
½ tsp Cumin seeds
½ tsp Fennels seeds
3 garlic cloves
Grated coconut handful
4 -5 cashew nuts
3 almonds
Few cardamom pods
Ingredients for frying (SET 2)
1 spanish onion
1 chilli green
1-1.5 tsp garam masala
3 cloves
Hanful curry leaves
½ tsp turmeric
½ tsp coriander powder
½ tsp mustard powder
Salt to taste
Method
- Add 2 tbsp oil in saucepan
- Add all ingredients in set 1 into the saucepan and fry until ingredients cook and leave side
- Take another wok, place on stove and add oil and allow it to heat
- Once oil is heated, add mustard seeds and wait till they start popping
- Add onions, chillies, curry leaves and cloves into the wok. Fry ingredients well until the onions turn golden brown
- Add turmeric, coriander powder and salt
- Add garam masala powder and continue
- Add mushrooms and fry. Add a little water to help in cooking and frying process. Turn the heat to low fire and allow time to cook
- Meanwhile, blend all ingredients in set 1 together using a blender. These were kept aside after frying them together
- Add the blended gravy with the mushrooms and other ingredients in the wok
- Mix well, wait till the gravy gets to simmer and serve
