Milk Pongal (Rice Pudding)
- Keep a chatti (or a saucepan) on the stove.
- Add the milk into the chatti.
- Add the rice as well.
- Wait until it comes to the boil. Even after it comes to the boil, wait until the rice cooks very well in the milk.
- Add the sugar, and mix well. Leave to heat for sometime.
- Remove the chatti from the stove and keep aside.
- Keep a saucepan on the stove. Add the Ghee into this saucepan.
- In the ghee, add the seeds from the cardamom pods, cashew nuts, and the sultanas. Wait until the sultanas inflate.
- Add this into the pongal (rice boiled in milk), and mix well.
- Serve hot on cold days, or serve chilled on warm days.
- 1 cup long grain rice
- 1 cup sugar - raw sugar / white
- 2½ cup Milk
- Cashew- handful
- Sultana - handful
- 3-4 Cardamom pods
- Ghee

Pongal is a very popular festival in India. It is celebrated mainly in South-India, where this festive season goes on for 4 days. The first day is known as Bhogi Pongal. On this day, all old items in the house are thrown away and the house is cleared and cleaned. The second day is actual Pongal day, 14th of January. The third day is Mattu Pongal, also known as the Harvest Festival. On this day, cows are colourfully dressed and decorated to show the happiness of the village, and the farmers. The last day is Kannu Pongal. On this joyous day, people gather with their family and friends and have a get together with some great food. Milk Pongal is a must-have dessert during this season.
