Inji Thokku 

Ginger Pickle

5 spoons sesame oil

1 tablespoons mustard seeds

5 green chillies,de-seeded and roughly chopped

100g (1 cup) grated ginger

120ml or (1/2 cup) thick Tamarind Extract

salt

 

 

Heat the oil in a frying pan.Add the mustard seeds and stir-fry for about a minute.Add the chillies and a pinch of salt and stir fry for 2 minutes.Add the tamarind extract and grated ginger and season with salt.cook until the ginger is soft and the extract thickens.Remove from the heat and allow to cool.Store in an airtight container.

 

Frozen Ginger( If fresh Ginger not available you can use this frozen ginger)
