Egg Curry - Muttai Kozhambu

Ingredients

  • 5- boiled eggs.
  • 1 medium sized onion.
  •  3 cloves of garlic.
  • 1 tsp cornflour.
  • 1 tsp chilli powder
  • 1/2 tsp cumin powder.
  • 1/2 tsp fennel seeds.
  • 3 tbs tomato paste.
  • little bit of dried fenugreek leaves.
  • coriander powder.
  • 1 tbs garam masala powder
  • little bit of grated coconut.
  • 1/2 tbs turmaric powder
  • small piece of ginger
  • small pinch of curry leaves
  • 1/4 cup of milk
  • salt to taste
  • oil-about 2-3 tbs.

Method

  1. Place the onion,garlic,chilli powder,garam masala powder,coriander    powder,cumin seeds,funnel seeds,turmeric powder, ginger,tomato paste,and grated coconut into the blender.
  2.  Add  water and blend until smooth.
  3. Turn on the stove, and in s saucepan add oil.
  4. Once oil heats, add the dried fenugreek leaves along with the curry leaves 
  5. Add the egg curry masala.
  6. Add some water into the blender and add this into the saucepan
  7. Add salt to taste
  8. Leave until it boils. While this is happening do step 9.
  9. In a separate bowl, mix the corn flour with milk. Add a little bit of water to it. Mix well making sure there are no lumps in the cornflour.
  10. Once the gravy comes to boiling point, add the cornflour and milk mixture (step 9) into the saucepan.Mix well until the corn flour mixture gets incorporated into the egg curry.
  11. Using a fork, gently poke each egg and add into the egg curry.
