  Curry Leaves and Ginger Chutney

DESCRIPTION

A very healthy chutney combining the goodness of curry leaves and ginger into a tasty blend. 

INGREDIENTS

METHOD

  • Ginger: 4-5 pcs
  • Curry leaves: large bunch
  • Green Chilli: 1
  • Grated coconut: A generous pinch
  • Tamarind Essence: 1 tbsp
  • Urid Dhal: 1tsp
  • Mustard seeds: 1/2 tsp
  • Oil: 2-3 tbsp
  • Salt to your taste
  1. Place wok on the stove and add oil to it. Allow it to heat and add mustard seeds
  2. Once the mustard seeds start spluttering, add the urid dhal and allow it to turn golden brown
  3. Add the ginger pieces to this and fry well
  4. Add curry leaves and continue to fry. Ensure that the mixture is fried well, and then add salt to taste.
  5. Add grated coconut and mix. Once fried well, remove from the stove and add it to the blender. Allow it to cool for a couple of minutes and then add the tamarind essence into this.
  6. Blend all the ingredients together.
  7. The mixture has to blend finely.  Add a bit of water if required to achieve this.
