Coimbatore Keerai Poriyal (Spinach Stir Fry)

Ingredients
1) 1 tablespoon -clarified butter and 1 teaspoon of sunflower oil
2)1-White spring onions-chopped,
3)5-green chillies-chopped,
4)1spoon-mustard seeds,
5)1 bunch of curry leaves,
6)1 Teaspoon-Cumin seeds,
7)1 Teaspoon-Urad dhal,
8)1 Tablespoon of grated coconuts,
9)2 teaspoons of Sambhar Powder
10)Ginger-garlic paste
11)2 teaspoons of sambhar powder
12)Bunch of Spinach
Method
1)Take a bunch of Spinach and microwave it for 5 mins in microwave safe bowl and it becomes to easy to chop when it gets compressed.
2) Add 1 tablespoon -clarified butter and 1 teaspoon of sunflower oil heat it and fry all the ingredients first in a sequence
3)Mustard seeds,curry leaves,cumin seeds,urad dhal-till it becomes brown in colour
4)-White spring onions-chopped,
green chillies-chopped,grated coconuts,
5)Sambhar powder and chilli powder
6)Finally add the chopped spinach and cook for 10 mins and cook well till its gets dry
Serve Spinach stir fry with Curd rice,Roti with Dhal and with Sambhar rice.
