Carrot Poriyal - Carrot Fry
DESCRIPTION
This is a simple Indian style carrot stir fry with a combination of spices, lentils and herbs.
Ingredients
- 2 carrots-grated
- 2 green chillies-chopped
- 2 medium sized onions-roughly chopped
- Grated coconut-handful
- Pinch of mango powder
- 1 dried red chillies
- sugar pinch
- Asafotida
- Salt to taste
- Oil to fry(about 2 tbsp)
Method
- Turn on stove,and in a saucepan add some oil and wait for it to heat up
- Add the onions and a pinch of sugar wait until the onions turn golden brown.
- Add the green chillies
- Add the mango powder along with the red dried chilli
- Add the grated carrot
- Stir the combination for about 3 minutes
- Add the grated coconut by spreading evenly on top of the preparation
- Serve
