Carrot Poriyal - Carrot Fry

DESCRIPTION

 This is a simple Indian style carrot stir fry with a combination of spices, lentils and herbs.

Ingredients

  • 2 carrots-grated
  • 2 green chillies-chopped
  • 2 medium sized onions-roughly chopped
  • Grated coconut-handful
  • Pinch of mango powder
  • 1 dried red chillies
  • sugar pinch
  • Asafotida
  • Salt to taste
  • Oil to fry(about 2 tbsp)

Method

  1. Turn on stove,and in a saucepan add some oil and wait for it to heat up
  2. Add the onions and a pinch of sugar wait until the onions turn golden brown.
  3. Add the green chillies
  4. Add the mango powder along with the red dried chilli
  5. Add the grated carrot
  6. Stir the combination for about 3 minutes
  7. Add the grated coconut by spreading evenly on top of the preparation
  8. Serve
