Carrot Halwa - Easy to make (Soy Milk)

METHOD

INGREDIENTS

  • 4 carrots medium sized
  • 3 cardamom pods
  • 1 clove
  • 4 cashew nuts
  • 2 almonds
  • A small handful of mixed seeds
  • 1/3 cup sugar
  • Ghee enough for cooking
  • Soy milk enough for boiling carrots
  1. Chop the 2 end of the carrots and roughly chop the carrot into small pieces and put them in a microwave container
  2. Add enough soy milk to soak all the carrots in the container
  3. Add the nuts, seeds, cardamom pods and clove into the container
  4. Heat in the microwave oven for 10 minutes and remove
  5. Once the ingredients in the microwave container have cooled transfer the ingredients into the blender and blend them smooth
  6. Transfer the blended paste into an another utensil, and begin to heat on the stove
  7. Add sugar into the utensil and mix
  8. Once the mixture thickens, gradually start adding ghee. Add enough ghee until the carrot halwa comes together and does not stick to the surface of the utensil
  9. Once the carrot halwa is ready, remove the utensil from stove. Take another plate or bowl and coat the surface with a little bit ghee and transfer the halwa on the plate/bowl. Spread the halwa throughout the plate.
  10. Allow it to cool and serve.

DESCRIPTION

This is a very healthy, colourful and luscious Indian sweet recipe made from the combination of carrots and soy milk. This recipe is great for a dessert whether it be served cold or warm and is certainly an epicurean delight!
