Badam Kesari

A healthy sweet dish made from semolina and almonds. Great to relish as a dessert ….

Ingredients

Badam kesari

  • 1 cup semolina (Coarse)
  • Enough milk to boil semolina
  • Couple of Cashew nuts
  • 1 tsp Nutmeg
  • A of pinch of cardamom
  • Few sultanas
  • Handful of Crushed Almonds
  • Ghee
  • 1 ¼ cup Sugar

Method



  1. Turn stove on and place your cooking utensil on stove
     
  2. Add ¼ cup milk into this utensil and wait for it come to boiling point
     
  3. Once the milk reaches boiling point add semolina slowly as you keep stirring. This is to make sure that no lumps are formed of semolina while it absorbs the milk.
     
  4. Once the semolina absorbs the milk add all sugar into the utensil
  5. Add crushed almonds and keep stirring.
  6. Once sugar starts caramelizing add cardamom and nutmeg and keep mixing ingredients together
  7. Continue to mix and remove any lumps
  8. Gradually add ghee and continue to mix (There is no measurement for ghee. Just add enough ghee to make sure it becomes soft and brings the ingredients well together).
  9. Cook for a few minutes and serve.
